Gum Paste Recipe

Ingredients:
4 Teaspoons of warm water
1 Tablespoon of Unflavored Gelatin
1Tabelspoon of Glucose
1 Tablespoon of Tylose
1 Tablespoon of Shortening
4 Cups of Sifted Confectioners Sugar
Directions:
1. Place 1 tablespoon of unflavored gelatin in a glass cup.
2. Add the 4 teaspoons of warm water while stirring continuously to avoid clumps.
3. In a separate bowl, heat the 1 tablespoon of glucose for about 20 seconds. (Avoid boiling the glucose)
4. Add the glucose to the gelatin and water mixture.
5. Add the 1 tablespoon of shortening to the mixture and heat in the microwave for about 15 seconds.
6. In a large bowl, sift the confectioners’ sugar and tylose, and make a dam in the middle.
7. Place the gelatin mixture in the middle and stir with a wooden spoon until it turns into a dough like stage.
9. Once it is pliable, knead the gum paste until all the sugar is incorporated.
The gum paste can be kept for up to 1 week in dough form. After 1 week, discard the dough.
Tips:
Gum paste can handle strong colors.
If the gum paste is stretched and starts to shrink back up, it needs more sugar.
