Fondant Recipe

Ingredients:

4 Lb bag of Confectioners’ Sugar (and take out 2 cups)

2 Ounces of Water (1/4 Cup)

4 Ounces of Glucose

2 Tablespoons of Unflavored Gelatin

2 Tablespoons of Lemon Juice

5 Teaspoons of Glycerin

2 Tablespoons of Almond Extract

Directions:

1. Place the unflavored gelatin in a glass cup.

2. Add 2 ounces of water to the gelatin mixture while continuously stirring to avoid clumps

3. Heat the mixture in the microwave for 15 seconds.

4. Add the 2 tablespoons of lemon juice to the gelatin mixture and stir.

5. In another glass cup, heat the 4 ounces of glucose in the microwave for 20 seconds and add the glycerin and almond extract.

6. Then add the glucose mixture to the gelatin mixture and continue stirring until it has all been

incorporated.

7. In a large bowl, place the confectioners’ sugar and make a dam in the middle.

8. Place the gelatin mixture in the middle and stir with a wooden spoon until it turns into dough like stage.

9. Once it is pliable, knead the fondant until all the sugar is incorporated.

10. Once you are finished, knead the fondant into a ball and place a very small amount of shortening on top just to keep it moist.

11. Wrap the fondant in plastic and keep in a dry cool place and let it set for 24 hours before using.

Tips:

  • This recipe does not handle strong colors such as red or black.

  • When the fondant looks cream colored, it is missing more sugar.

  • If you are making one complete color, it is best to add the gel coloring into the liquid mixture before incorporating the sugar.

  • When you are making small portions of colors, only take out the amount you need and color the fondant. Remember that when adding gel colors, the fondant may require more sugar.

  • You can make the liquid mixture ahead of time and store in the refrigerator until you are ready to make the fondant.
